Beet Soup with Bacon

Most people would know this soup as borsch, however I did not properly consult numerous traditional recipes before creating this soup so I did not feel comfortable calling it that. While this may not be everyone’s favourite, beets are rich in folate and manganese which plays a role in brain function. So get your beets peeps!

Ingredients:

4 cups chicken stock

1/2 to 1 tsp salt depending on saltiness of your chicken stock

1 teaspoon fresh black pepper

4 beets, peeled and diced

1 potato, cubed

1 cup bacon, chunks or 1 inch pieces

1/4 green cabbage (about 2 cups), sliced thinly

1/4 cup dill, minced

Sour cream

Directions:

Fry bacon in some oil to render the fat. Add beets, cabbage, and potato. Add chicken stock and black pepper. Bring to the boil and simmer on low for 30 minutes. Adjust seasoning (add about 1/2 tsp salt then more if needed).

Serve with a dollop of sour cream and dill.

      Me too! I would love it also! Cooked beets are super healthy. I love the addition of bacon.
